Saturday Mornings are for Mimosas & BRUNCH!


It has been way too long since I posted something. These past months had been crazy...between tons of schoolwork, my twenty thousand ideas with Food from the Heart, trying desperately to keep in shape (after pigging out during spring break plus two months of having friends and family over OMG) and finally my new cute boyfriend… My schedule was completely booked.  Finally last month I graduated from the University of Miami as Magna Cumlaude (Thank you thank you, I'm a little nerd). And it was also my boy’s birthday, for what I planned a surprise brunch! Everything came up so yummy!


It was a complete marathon to cook brunch for 20 people in no more than three hours but I did it! (now I considered myself the fastest cook ever!) In this blogpost I'm sharing with you two highlights of the day.

The absolute favorite was the Rum Bread Pudding


I decided to experiment with this recipe because it’s my boyfriend’s favorite dessert.

Ingredients:

- Crustless Italian bread (almost 1 lb. with crust)
- Evaporated Milk (1 can)
- Coconut milk  (1 can)
- Eggs 2
- Raisins ¼ cup
- Brown Sugar ¾ cup
- Brown Rum ¾ cup
- Cinnamon 1 tbsp
- Vanilla 1 tbsp

In a baking dish cut the bread into cubes (cut first the crusts then into cubes).Combine the evaporated milk, coconut milk, eggs, sugar, rum, cinnamon, vanilla and raisins. Pour the mixture into the dish containing the bread. Make sure all the bread is covered with the mixture. Baked for 30 minutes at 350°F.

**Optional Rum Sauce
In a saucepan add ¼ cup of Brown sugar + 2 tbsp of agave nectar + ¼ cup of dark Rum + 1 stick of butter. Let the mixture thicken for 8 minutes.

Serve the bread Pudding Warm + one scoop of Bluebell Homemade Vanilla ice cream and a little Rum sauce! & Ta-da!


Turkey Bacon Cinnamon Rolls

These little guys were also one of the favorites among my friends and they are sooo easy to make!



All you need is a tube of Cinnabbon ready-to-bake pastry and turkey bacon (to make it a little less guilty ;)).  Unroll the dough, place one strip of bacon along the dough and roll it up. Bake in a 350°F oven for 15 minutes, drizzle a little glaze and its done!

We had such a great time, my boyfriend was totally surprised and he loved it! (best girlfriend ever!!! hahaha)
